The olive tree (olea europea sativa), which belongs to the olea's family, is a perennial tree. There are more than 2000 different varieties around the world.
Ranging from Middle East to all along the Mediterranean, nowadays, the olive tree is cultivated around the five continents. Probably it appeared as a fruit of a mutation in 3000 B C.
A reduced size tree, it has a devious, knotted and twisted trunk that it divides and gets empty when it is older. Its branches which grow out from the trunk use a form of a light oval out line top. The trunk has a greyish-green colour that can appear wrinkled and brownish-black colour when it is older.
The leaves have lanceolate form and a small corolla and they are perennial, and their distribution is opposite and simple.
Its flowers, blossoming between ending April and middle June have got a whitenish-green colour. Not all of them can arrive to fruit condition, some of them fall before.
Olive, the olive tree's fruit, has an oval from 1 to 3, 5 cm. Green before it ripens acquiring a violet black colour. The olive, keeps inside a good priceless as it is Extra Virgin Olive Oil.
